Elsie Emily Simins

Elsie Emily Simins, age 73 of Copperas Cove, went to be with our Lord and Savior on December 21, 2023, after bravely battling cancer for over 20 years. She will be laid to rest at Austin Memorial Park in a private service followed by a celebration of life.

Emily was born on February 6, 1950 in St. Albans, New York to Leroy Knoch and Elsie Rokos. She married her husband Peter in 1970. Over the course of her life, she worked for several different educational institutions. Elsie was most recently known by many in Copperas Cove as the evening hospitality expert at Chick-Fil-A, always willing to share a smile and a conversation.

Emily was preceded in death by her parents; and husband, Peter Simins.

She is survived by her son, Sean Simins; brother, Lee Knoch and wife, Betsy Steele; and granddaughter, Hayden Simins.
